The feast of Corpus Domini (which originated in Bolsena with the Eucharistic miracle that took place in the splendid Basilica of Santa Cristina) is also important and very evocative, during which the flowers of the Infiorata burst with colours along the beautiful streets of the historic centre.
Tuscia, thanks to the variety of its typical products, can be called the paradise of food and wine. The landscape, untouched over the years due to the absence of industrial plants, is wild and rich. At present, the queen of agricultural production in Tuscia region is undoubtedly the hazelnut, which is widespread in the Cimini Mountains and strongly characterises a natural landscape already greened by the splendid forests of oak, beech and chestnut trees.
Another “jewel” of Tuscia is olive oil, one of the symbols of Viterbo agriculture. The most prized olive oil is that of Canino, one of the best in Latium, which for its excellence has received the DOP (Protected Designation of Origin) label.
There are many other products, perhaps less known nationally, but of great quality and closely linked to local traditions: The lentils of Onano, the eel and the whitefish of the lake of Bolsena, the red garlic of Proceno, the honey of Monte Rufeno, the black bread of Monteromano, the sambuca of Viterbo, chestnuts, including the exquisite marroni chestnuts of the Cimini Mountains, the potatoes of Alto Lazio, the carrots of Viterbo, the bean of Sutri and the “bean of purgatory” of Gradoli are just some of the “goodies” that the experienced and curious gourmet can discover in the typical restaurants of Viterbo. This immense agricultural heritage and popular traditions are reflected in the authenticity and specificity of the products on the table.
